Recipe of the Week: Peanut Chicken Wrap
This was a super easy dinner - and so flavorful and delicious! The peanut sauce was the most time consuming part to make... maybe 5 minutes? I am a sucker for peanut sauce, yumyumyum - and I was afraid that there might not enough for all of that coleslaw but there totally was, so much actually that I ended up adding more coleslaw than the recipe called for.
Also, I was going to get a rotisserie chicken for this recipe, so I didn't have to cook anything (it was a hot day), but the store was out so I got a container of "rotisserie cut" thick sliced deli meat and it worked perfectly. I also added avocado to mine, and on my second wrap I left out the chicken altogether and it was probably even better (to me).
