Pin of the Week: One Pot Melty Burrata Lemon Pesto Pasta

 This is a very simple, basic recipe with so so much flavor - YUM. Maybe better than any Italian restaurant dish I've had - the only issue was finding burrata, it took 4 grocery stores (Albertson's finally had it). The pesto recipe that the author recommends looks great, but I just used my jar of Costco pesto for time/effort's sake. Also, we could've totally cooked up some meatballs to go with this and it would've been easy and good I'm sure, but it was a meatless Monday situation.
